Sculpted Cakes
I had the opportunity to work on a special project for Three
Brother's Bakery in Houston Texas.  The owners, Janice and
Bobby Jucker, hired me as Project Director for this order.  The
cake was made for Boots and Coots and delivered to the
Petroleum Club in Houston.  The team that I worked with on this
cake was fantastic. I give much thanks to Kim, Ben, Julie,
Candice, Manuel, and everyone else that helped make the cake
a success.  The original cake was designed by Bobby Jucker
himself.  Pyrotechnics were designed and operated by Ben
Gibson.  Kim, Candice and I all worked long hours to decorate
the entire confection in butter cream icing and set it up.   Ben
and I airbrushed, redesigned and did most of the finishing on the
cake.  Kim was invaluable.  Delivered by Manuel and his team.
The Boots and Coots family was very happy with their cake
which gushed chocolate "oil" and huge flames from the top of
the oil Derek. It can be seen in the gallery for the 30th
anniversary party on the Boots and Coots website at

Okay...sculpted cakes are just plain cool.  Not everyone can look at a hunk of cake and see an object and then
make that come to life.  This is where real artistic talent comes to play.  If you know a cake decorator who can
do that, you know an artist.
Southeast Texas has a few really talented cake artists that can sculpt cakes.  Julana Phenix at Something
Special Bake Shop is really amazing...and I'm pretty good at it too if you ask my cake decorator friends.
Most cake decorators will talk you into something much easier than cake sculptures when given half a
chance....I on the other hand will try to talk you into one because I love the art that goes into turning cake into
an edible masterpiece.  Maybe some of these are not all that incredible looking in size or stature but not a single
one is made with a shaped pan.  That may be more simple than a two foot tall standing T-rex cake but still not
just a sheetcake.  So bring it on...because if you don't see one here on this page it's just because I haven't been
asked to make it yet!

The T-rex cake
This cake was built on a custom made stand for Holly Harred's son.  The legs, tail
and neck are made from rice crispy treats.  Head is styrofoam covered in fondant.
The cake is in the back and belly of the dinosaur.  It is completely iced with
buttercream icing and even textured to look scaly.  He was then airbrushed for
color.  Teeth arms and feet are fondant.  I was asked to teach this cake in a class
for the Pearland cake Society cake club.  Doesn't he look cute dancing with me in the
kitchen before he left...we were celebrating his successful creation.  He was just so
sweet...and bigger than he looks

Central Jaguar Cake
This sculpted giant cat cake was made to represent the Mascot at Central High School.  It
was for a retirement party and served almost 200 people.  The young lady that it was made
for must have been very special to her friends who ordered this for her party.  This was a
really cool cake.  It practically filled the back of my 4 Runner.  PVC pipe frame
construction with cereal treat legs and neck.  Head is styro with fondant.  Cake makes up the
back and sides of Jaguar and is completely iced in Buttercream icing and then airbrushed
for detail.  Progressive pictures below are of the cakes construction...or de-construction rather.
